MS-SBDC assisted Kevin in his business plan and funding process. Kevin modified the kitchen in a historic building formally housing the Hotel Vicksburg. Fit Chef grew from selling healthy meals on the sidewalk of the hotel to two more locations in Vicksburg and another in Madison. Fit Chef operates a food truck as well as an ax throwing bar venture in Vicksburg. Kevin also provides healthy meals to the homeless in his community.
